Food
Safety Audits
A Food Safety Audit involves auditing
your system to ensure that hazards have been identified on
the basis of correct scientific and technical judgement, and
that these hazards are being adequately controlled. Support
programs such as Good Manufacturing Practice (GMP), Pest Control,
Training and Cleaning and Sanitation are evaluated to ensure
effectiveness in terms of the specific food type being handled
or produced. Recommendations can then be made concerning procedures
or corrective action necessary to ensure the best outcome
in terms of food safety and quality.
HACCP
Verification
The implementation and maintenance
of an effective HACCP system depends largely on regularly
scheduled verification activities. Verification is a form
of audit that determines the validity of a HACCP system -
that it is operating as planned, and that hazards are being
controlled. Important aspects of verification are initial
and ongoing validation to determine that the plan is scientifically
and technically sound. This necessitates a detailed knowledge
of the physical, chemical and biological hazards associated
with specific food types. Verification further involves the
evaluation of the adequacy of the Critical Limits and Critical
Control Points of the system, as well as addressing corrective
action and monitoring protocols.
Quality
